Ingredients
2 servings
- 8 rice paper sheets
- 2 oz thin rice noodles
- 1 carrot, cut into thin matchsticks
- 1/2 cucumber, cut into thin matchsticks
- 1 small avocado, sliced
- Fresh mint and cilantro leaves
- 3 oz firm tofu, cut into strips (optional)
- 2 tbsp peanut butter
- 1 tbsp soy sauce or tamari, 1 tbsp lime juice, 1 tsp maple syrup and 2 to 3 tbsp warm water
Instructions
Cook the noodles according to package directions, rinse in cold water and drain
Whisk the peanut butter with the soy sauce, lime juice, syrup and enough warm water for a smooth dip
Set out all the fillings in small bowls between you
Dip a rice paper sheet in warm water for a few seconds until just soft
Lay it on a damp board and place a little of each filling on the lower third
Fold in the sides and roll up tightly
Repeat, taking turns to roll
Halve the rolls and dip them in the peanut sauce
Tips
- Contains peanuts and soy; sunflower seed butter makes a peanut-free dip
- Vegan, and gluten-free with tamari
- Do not soak the rice paper too long, as it keeps softening while you fill it
Check for allergies and intolerances before you start, and swap ingredients as needed.
