Vanilla Panna Cotta with Berry Sauce

DessertMedium

A gently set vanilla cream with a bright berry sauce, made ahead so the evening stays relaxed.

Ingredients

2 servings

  • 1 cup heavy cream
  • 1/4 cup milk
  • 2 tbsp sugar
  • 1/2 vanilla bean, split (or 1 tsp vanilla extract)
  • 1 tsp powdered gelatin (or 1/2 tsp agar powder)
  • 1 cup mixed berries
  • 1 tbsp sugar or honey for the sauce

Instructions

  1. Sprinkle the gelatin over 2 tbsp cold water and let it soften for 5 minutes

  2. Warm the cream, milk, sugar and vanilla until steaming, without boiling

  3. Take off the heat, remove the vanilla bean and stir in the gelatin until dissolved

  4. Pour into two small glasses or ramekins

  5. Chill for at least 4 hours until set

  6. Simmer the berries with the sugar for 5 minutes until saucy, then let cool

  7. Spoon the berry sauce over the panna cotta

  8. Serve well chilled

Tips

  • Gluten-free; contains milk
  • Gelatin is not vegetarian; agar only sets after boiling for 1 to 2 minutes, so bring the cream briefly to a boil if you use it
  • Make it in the morning or the day before

Check for allergies and intolerances before you start, and swap ingredients as needed.
